This one was and we loved them! They are super sticky and mine kinda looked like one big loaf of bread but they were so good! We had this with my homemade chicken noodle soup.

Ingredients

* 2 1/2 cups warm milk
* 4 teaspoons dry yeast
* 1/2 cup sugar
* 1/2 cup butter, softened
* 2 teaspoons salt
* 2 eggs
* 7 cups flour
* 1/4-1/2 cup butter (reserved)

Directions

1. Note: Due to its sticky nature, this recipe is best made in a standing mixer with a dough hook; the truly persistent could probably make this by hand with a bowl and a wooden spoon-- these rolls are worth the extra effort.
2.Sprinkle the yeast over the warm milk and let sit for approximately 5 minutes to proof.
3. Add sugar, 1/2 cup melted butter, salt and eggs; mix well.
4. Add flour and mix well.
5. Blend at medium-low speed for about 5-10 minutes, scraping down sides once or twice.
6. Cover bowl with plastic wrap and a towel; let rise in bowl about 1 hour or til doubled.
7. Remove the towel and plastic wrap and turn mixer on low to"punch down" the dough; if you wish, you can let the dough raise a second time as it makes for a more flavorful roll.
8. Remove the dough from the bowl and divide into 36"plops"; The dough will be very sticky.
9. Place"plops", edges just touching, in a buttered 9x13 baking pan; don't bother trying to smooth out the"plops"-- they will smooth out as they raise.
10. Cover pan with plastic wrap and let rise til doubled, about 30-40 minutes.
11. Melt the reserved butter and drizzle over the top of the rolls before baking.
12. Bake at 400°F for 10-15 minutes or until golden.

Taco Salad

We have this often at our house. They taste just like Cafe Rio.

SWEET PORK
2 pounds pork (pork roast)
3 cans Coke (NOT diet)
1/4 c. brown sugar
dash garlic salt
1/4 c. water
1 can sliced green chilies
3/4 can RED enchilada sauce (I used Old El Paso brand, medium spiciness)
1 c. brown sugar

Put the pork in a heavy duty Ziploc bag to marinade. Add about a can and a half of coke and about 1/4 c. of brown sugar. Marinade for a few hours or overnight.

Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry). Remove pork from crock pot and drain any liquid left in the pot. Shred pork.

In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.

Put shredded pork and sauce in crock pot and cook on low for 2 hours. That's it!

CILANTRO-LIME RICE

1 c. uncooked rice
1 tsp. butter or margarine
2 cloves garlic, minced
1 tsp. freshly squeezed lime juice
1 can (15 oz) chicken broth
1 cup water
1 Tbsp. freshly squeezed lime juice
2 tsp. sugar
3 tablespoons fresh chopped cilantro

In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring to a boil. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.

BLACK BEANS

2 Tbsp. olive oil
2 cloves garlic, minced
1 tsp. ground cumin
1 can black beans, rinsed and drained
1 1/3 c. tomato juice
1 1/2 tsp. salt
2 Tbsp. fresh chopped cilantro

In a nonstick skillet, cook garlic and cumin in olive oil over medium heat until you can smell it. Add beans, tomato juice, and salt. Continually stir until heated through. Just before serving stir in the cilantro. (**NOTE** we added a can of corn, drained, to the beans with a dash of cumin and chili powder, it was AWESOME! We recommend doing this even though it's not "traditional Cafe Rio")

We just put all the ingredients in the tortilla (make sure it's the burrito size one) and we always put a little of the pork sauce inside to keep it juicy. Wrap it up and put some more juice on top with lots of cheese. They we broiled it in the oven for a few minutes til the cheese starts to brown a little. Watch it carefully because they can burn easily if you're not watching! They are super yummy!

White Chili in Bread Bowls

1 onion, chopped
2T. oil
bottled green salsa (1-2 cups)
2 cans corn (i used frozen)
2 cans white beans (northern beans)
2 cans chicken broth
4 cups chicken, cooked and shredded
2T. lime juice
1 t. ground cumin
dash of chili powder
1/2 t. ground pepper
cheese
fritos

In a large saucepan cook onion in oil. After it is carmelized a little bit, add the green salsa. Heat for about 3 minutes. Then I just threw everything in the crockpot and put it on high for about 4 hours. Serve with cheese and fritos on top.
FOR BREAD BOWLS:
I just used rhodes bread dough. I let the loaf thaw and cut it into thirds. Form into a ball then put onto greased cookie sheet. Brush with egg and cover with greased saran wrap and let rise until double. Bake at 350* for about 25 minutes.

Welcome

I'm ALWAYS trying new recipes.
